FOOD: SOUPS TO FIGHT CORONAVIRUS

Its all about the garlic !

As many of you may still be self isolating and awaiting your vaccines or maybe you are anxious about having the vaccine. So give yourself the best chance by boosting your immunity, I am going to introduce you to three nutritional powerhouse soups. All can be made very quickly , and all can be made from frozen and store cupboard ingredients. The reason I chose these soups………

  • You may be on your own so very little prep required (no chopping and peeling)
  • When you are feeling poorly you sometimes only want soup
  • All the ingredients are good for the immune system and detoxifying the body
  • You can make one big pot for when you feel like a littel throughout the day
  • Soft food so good for sore throats

Many people are stockpiling tinned soups these contain high levels of salt and sugar which can cause inflammation. Important to cut down on sugars and dairy when you have flu symptoms as they can excacerbate mucus in the membranes and inflammation. You need plenty of protein to fight the infection. avoid acidic foods eg tomatoes if you are vomiting .

Ingredients to Stockpile

Your shopping list for all 3 soups:

FROZEN SECTION

BAGS OF: CHOPPED ONIONS/LEAF SPINACH/BUTTERNUT SQUASH/BROAD BEANS/CHICKEN BREASTS

STORE CUPBOARD

JAR OF FRESH GRATED GINGER/CHICKEN STOCK CUBES/TURMERIC POWDER/GHEE/ FRESH GARLIC BULBS(LAST UP TO 6 MONTHS)

ROAST GARLIC SOUP

Serves 3/4

4 whole garlic bulbs

cup of onions

Ghee

Chicken stock

  • Slice across top of each bulb, no need to peel . Drizzle with olive oil. Cover with foil and roast for 40 mins in oven 190 degrees.
  • Melt a tablespoon of ghee and saute the chopped onion
  • Pour in 850ml of chicken stock
  • When garlic nice and soft allow to cool a little then squeeze the garlic out of each bulb into the soup.
  • Add 4 blocks of leaf spinach (optional)
  • Add seasoning ( like WHITE pepper in this one)
  • Blend until smooth

NUTRITIONAL NOTE: I would use onions and garlic as much as possible they are nutritional power houses that fight inflammation. Garlic is good at detoxifying the body is anti bacterial/antibiotic as they contain a chemical called Allicin. It is better to roast the garlic than chop as if you don’t chop/blend finely enough and a piece gets lodged in your intestines you can get garlic poisoning and it is very unpleasant take it from me. I use ghee (clarified butter) as it is tastier than butter but also has the milk part taken out so no lactose.

CHICKEN AND BROAD (FAVA)BEAN SOUP

Serves 3/4

2 cups of frozen broad beans

1 cup of onions

ghee

1 chicken breast

chicken stock

  • Wrap chicken in foil with a little water and seasoning place in oven 180 degrees for 40 minutes. this way it keeps it nice and moist.
  • Saute onions in ghee
  • Add broad beans and saute for a few minutes
  • Add chicken stock and boil for 15 minutes
  • Blend until smooth.
  • Once chicken cooked ( ensure it is cooked thoroughly) flake it into the soup
  • Grind black peppercorns over the top.

NUTRITIONAL NOTES: Broad beans are LOADED with vitamins,minerals,fibre and protein. Impressive health benefits such as improved motor function and immunity. Chicken of course is great for protein and makes this soup more substantial. However if you need a real quick fix just omit the chicken . The Fava soup is great just how it is. Tastes amazing. I have it at least once a week.

BUTTERNUT SQUASH,TURMERIC AND GINGER SOUP

SERVES 3/4

2 Cups of butternut squash

1 tablespoon of ginger

2 teaspoons of turmeric powder

Chicken/veg stock

Add some onions and garlic too if you like and seeds if you want some crunch.

  • Just throw everything in a pot and boil for 15 minutes
  • Blend . Season. That simple.

NUTRITIONAL NOTES: Turmeric is anti inflammatory. Butternut Squash is good for ACE vitamins and B vitamins, calcium ( great if you have cut back on the dairy), magnesium and zinc. It supports the natural function of the immune system.

SELF ISOLATING ?

10 IDEAS FOR POSITIVE PROJECTS

This is a fraught time for many of us especially when we have been told to self isolate. I understand this is difficult for some people but whether you have a family, live on your own or are self isolating with friends this must be turned into a positive experience. It is a forced position we are increasingly are finding ourselves in but its unlikely this will happen again when we have time to adopt new projects and who knows it may make us change the way we live in the future.

Here are some of my ideas but I would love to hear from you guys on inventive ways you are spending your time !!! Fill in the comments below and share.

  • Clear out closets actually try everything on (yes, you have time now !) and if you don,t love it bin or donate.
  • Laser hair removal at home. I have a Phillips Tria (£375) that I never have time to use as it takes SOOO long . But now I can dedicate a proper program to blitz the hair ! If you don’t have one they are currently on sale at triabeauty.co.uk for £249 a whopping £126 pound saving ! So depending on how long we are in lockdown at least you will be hair free by the summer. So buzz the fuzz !
  • Get your old wii fit out ! Having rediscovered mine this week it will now be a permanent fixture it really does boost your fitness and motivates you with targets as you train with instructors who interact. Great if you are missing the gym or feeling lonely. Also use the Wii to interact with the family with sporting olympics. Im loving the wii.
  • On the fitness front there are many Yoga beginners classes it is fabulous for fitness but great for mental health too which may be a stronger incentive for you at this time. 30 minutes every morning in just two weeks I promise you there will be a noticeable difference in strength flexibility and tone.
  • Dust down that healthy cookbook you bought in January and learn lots of new healthy recipes assuming at the time of this publication you can get produce delivered. Or alternatively use a home delivery cookery course such as Gousto. I love Melissa Hemsleys ayurvedic recipes check out her instagram.
Chickpea and Coconut Stew
  • Get out in the garden as the weather is now brightening up and so important to breathe fresh air. Order bulbs and plants on line, jet wash the patio and garden furniture, vacuum the astro turf oops sorry I mean, feed the lawn !
  • Learn an instrument I downloaded a brilliant App called ‘ Simply Piano’ its now been 3 months since I started and my piano playing has improved dramatically. Honestly in 2 weeks even as a total beginner you can be playing Chart tunes by the end of that period. Imagine if we end up self isolating for months you will be a concert pianist. I am totally addicted and I practise every day where possible . If you don’t have access to a piano download a keyboard (virtualpiano.net)
Learn a New Skill
  • Catch up on a box set. I don’t get too much time for TV but I personally have pencilled in The Morning Show with Jennifer Aniston (she is popping over to watch it lol !). I can recommend The Goop Lab (6 episodes) mind blowing informative stuff. Both on Netflix.
  • Clear out the filing cabinet. Sort your paperwork. Shred anything with your ID on. Keep a separate receipts book for insurance and tax etc. Change all your passwords, which should be done on a regular basis and log them in a format only you can understand. I love an orderly office so this is done regularly in my home but it is often overlooked. Yes I am talking to you ……yes you !

  • Write some beautiful e mails or send e cards to friends and family you are missing. Keep the communication going . They may not be enjoying themselves as much as you as they may not have READ THIS ARTICLE. So do your bit and forward it onto everyone you know.
